Dave’s Barbecue Sauce and Sticky Baby Back Ribs

Rib Rub:
Fresh sage, ground with mortar and pestle
Salt and pepper to taste

Basting Sauce:

2/3 cup water
1/3 cup cider vinegar

Barbecue Sauce:
1 cup catsup
1 cup water
1/2 cup apple cider vinegar
1/3 cup Worcestershire sauce
¾ cup french’s yellow mustard
½ cup brown sugar
1 cup honey
1-3 tsp Louisiana hot sauce

Combine all ingredients for barbecue sauce. Heat and simmer for 1 hour. Cool and then chill and refrigerate.

Dry rub ribs and marinate over night
Depending on the configuration of your grill or smoker – keep a large bowl of beer in the steamer to keep the ribs moist. Baste periodically with basting sauce.
When the ribs are fully cooked or smoked – smother in barbecue sauce and wrap tightly in aluminum foil and let sit for 2-3 hours in an oven set to low.
Prior to serving – just touch off on the grill.

Harrison House Suites Fruit Crisps

3 Tbsp. All purpose flour
3 Tbsp whole wheat pastry flour
¼ c. brown sugar
¼ c. sugar
¼ tsp. cinnamon
¼ tsp. nutmeg
¼ tsp. salt
5 Tbsp. butter
¾ c. chopped nuts (pecans, walnuts, almonds) – I use pecans
½ c. old fashion oats

Filling

3 medium granny smith apples (see note below)
3 McIntosh apples
1 ½ Tbsp. fresh squeezed lemon juice
¼ c. sugar
½ tsp. cinnamon

Topping:

Place all ingredients except nuts and oats in food processor and process until the consistency of corn meal
Add nuts and oats and process just to incorporate
Place in freezer for 1 hour

Filling:

Peel apples and cut into pieces and toss with other ingredients
Place in greased ramekins and put generous amount of topping on
Bake at 400 degrees for about 20-30 minutes until apples are soft and bubbling
Serve with whipped cream or ice cream.

Note: For a GF (gluten free) version substitute rice flour for all purpose and pastry flour and eliminate oats. These crisps can be made with pears, berries, or peaches. In spring, we use rhubarb. Use 1 cup of sugar for every 4 cups of rhubarb.
