Roasted Peanut Salad


This is a traditional Indian street food. It is served wrapped in a hand made paper cone or in a banana leaf. Use the roasted peanuts as a base and add cucumber, tomato and carrots to create a healthy side dish or salad. Make sure to dress the salad right before serving so the peanuts stay crunchy.

Serves 4

1 c. Peanuts, roasted

1 Tbsp. Red Onions, finely chopped, or thinly sliced

Freshly Squeezed Lime Juice

1/2 tsp. Cumin, or more to taste

2 Tbsp. Cilantro, diced

1/3 c. Carrots, Julienned, optional

1/3 c. Cucumber, seeded and diced, optional

1/3 c. Roma Tomato, seeded and diced, optional

Salt, to taste

Red Chili Powder, to taste

1. Roast peanuts until golden brown in oven or on stove top.  Set aside to cool.

2. Toss red onions with a squeeze of fresh lime juice, cumin, salt and chili powder together.

3. Add Peanuts and cilantro and carrots, cucumber and tomatoes if using them.

4. Season to taste.
